Chocolate Hazelnut Sandies

These chocolate hazelnut sandies are lightly sweet and easy to make with a food processor. The dough takes just minutes to make and the cookies keep well for up to a week after they’re baked.

I love the taste of hazelnut, so I’m always interested in trying new hazelnut recipes. When I saw these cookies, I thought they looked so cute – each chocolate hazelnut cookie has a little hazelnut on top

I found the recipe on Daydreamer Desserts and it looked very easy to put together with a food processor. You simply pour everything into the food processor and it does all the work for you. It literally takes just a few minutes to make the dough.

Ingredients

  • Ground hazelnuts
  • Confectioner’s sugar
  • Unsweetened cocoa powder
  • Light brown sugar
  • All-purpose flour
  • Salt
  • Cold unsalted butter cut into cubes
  • Egg yolk
  • Whole hazelnuts, for garnish

How to Make the Cookie Dough in a Food Processor

Place the ground hazelnuts, sugar, cocoa powder, and brown sugar in the food processor. Process them for 20 seconds. Add the flour and process for another 5 seconds. Scrape down the sides, if necessary, to ensure all of the ingredients mix together.

Add the cubed butter and pulse until the dough looks like damp sand. This should only take about 18 seconds or so.

Divide the cookie dough between two pieces of parchment paper. Form the dough into logs and wrap each in the parchment. Chill the dough for at least 2 hours in the refrigerator. You can also leave it overnight if you want to make it ahead.

When you’re ready to bake the cookies, unwrap the logs and slice them into pieces approximately ¼” thick. Space the cookies about ¾” apart on your baking sheet and press one whole hazelnut in the top of each.

Bake for 17 minutes at 325°F and rotate the pan halfway through the baking time. Cool the cookies on the pan for three minutes before transferring to a wire rack.

How to Store the Cookies

What I love about these chocolate hazelnut sandies is that they keep really well. Once the cookies are cooled completely, they will keep well in an airtight container for up to a week at room temperature.

Ingredients

  • 1 1/2 cups ground hazelnuts
  • 1/4 cup confectioners sugar
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup packed light brown sugar
  • 1 1/2 cups unbleached all-purpose flour
  • 1/4 tsp salt
  • 1 1/2 sticks cold unsalted butter cut into 1/2 inch cubes
  • 1 large egg yolk
  • 1/2 cup hazelnuts optional garnish

Instructions

  • Process ground hazelnuts, confectioners sugar, light brown sugar, and cocoa powder in a food processor for about 20 seconds.
  • Add flour and salt, pulse for an additional 5 seconds to combine. Scrape down sides if necessary. Add the butter pieces over the dry ingredients and pulse until dough resembles damp sand for about 18 seconds.
  • While machine is running add the egg yolk and process until the dough comes together and forms a ball, approximately 20 seconds.
  • Cut two sheets of parchment paper. Divide dough in half, form two 4-inch thick logs and wrap each with a sheet, and place in refrigerator to chill for at least 2 hours.
  • When ready to bake, preheat oven to 325°F. Line two baking sheets with parchment paper or Silpat's.
  • Unwrap dough logs, with a sharp knife slice 1/4 inch thick cookies. Place cookies on baking sheets spaced about 3/4 inches apart. Press an unsalted roasted hazelnut in the center of each cookie if desired.
  • Bake for about 17 minutes, rotating the pan halfway through. Allow cookies to cool on the cookie sheet for 3 minutes then transfer to a wire rack until they have cooled completely.
