I love easy holiday cookie recipes and these red velvet Nutella cookies are ones I make every year. They’re easy to make with cake mix and each one is stuffed with Nutella.

I think they’re so festive – perfect for Christmas or Valentine’s day. I’ve never made a red velvet cookie from scratch because using cake mix is so easy. The cookies are crispy on the outside and chewy on the inside.

Sometimes I make red velvet chocolate chip cookies and skip the filling, but for this version, I decided to make them a little bigger so I could stuff them with the Nutella. The combination is great.

Ingredients

This is an easy one-bowl recipe and you only need five ingredients.

  • Red velvet cake mix
  • Eggs
  • Oil
  • Chocolate chips
  • Nutella

Recipe Steps

Mix the cake mix, eggs, and oil in a bowl. Stir in the chocolate chips.

Take a large scoop of dough and flatten it. Place ½ tablespoon of Nutella in the center and then pinch the dough together to seal it. Form the dough into a ball and place it on a baking sheet. Repeat this with the rest of the dough spacing each ball about two inches apart.

Bake the cookies for 10 minutes. They are done when they easily slide on the baking sheet without sticking.

I think the cookie taste best warm from the oven.

Nutella Filled Red Velvet Cookie

These festive red velvet cookies are stuffed with Nutella and are a quick and easy cookie for the holidays.

Ingredients

  • 1 box red velvet cake mix, I used Duncan Hines
  • 2 eggs
  • halfway between 1/3 and 1/2 cup of oil
  • 1 cup chocolate chips
  • Nutella for filling

Instructions
 

  • Prep baking sheets with parchment paper and preheat oven to 350°F. In a large bowl, mix the eggs, cake mix and oil. Once the batter is thoroughly combined, stir in the chocolate chips.
  • Take a large spoonful of dough (about an ice cream scoop worth), flatten out. Place 1/2 tablespoon of Nutella in middle of cookie dough. Then pinch closed, form into ball and place on cookie sheet. Repeat with remaining cookies, spacing about 2 inches apart.
  • Bake for approximately 10 minutes. Cookies are finished when you can slide them, without the bottoms sticking to the baking sheet. Best served while warm.
