Chewy Biscoff Chocolate Chip Cookies

Chocolate chip cookies made with Biscoff cookie spread are chewy with the famous flavor of speculoos cookies. Add in chocolate chips and you get a delicious batch of Biscoff chocolate chip cookies.

Have you tried Biscoff spread yet? If you’re a fan of Nutella, I urge you to try it. While it doesn’t taste anything like Nutella, it’s originally from Europe and has been spreading in popularity in the US, much like Nutella did.

What is Biscoff Spread?

The spread is made of the popular European cookie. The cookie is crunchy with a few spices and perfect to eat with a cup of coffee. They are served on some airlines, which is how they started getting popular outside of Europe.

I like Biscoff cookies, but I like the cookie spread even better.

For one thing, it tastes exactly like the cookie but because it’s in spreadable form, it lingers on your tongue and you can really savor the taste more.

Plus, instead of just enjoying it in the cookie form, you can spread it on toast, crackers, eat straight from the jar with a spoon, or use it to flavor all kinds of baked goods, like these Biscoff chocolate chip cookies.

After indulging in it for a week, I finally parted with some of my jars to make some cookies, and first on the list were these chocolate chip cookies I’m sharing today. I was inspired by my Nutella chocolate chip cookie recipe and substitute Biscoff spread for the Nutella.

Ingredients

  • Softened unsalted butter
  • Granulated sugar
  • Light brown sugar
  • Biscoff spread
  • Egg
  • Vanilla
  • Flour
  • Baking soda
  • Salt
  • Chocolate chips

Recipe Steps

Cream the butter and sugar in a large bowl. Add the egg, vanilla, and cookie spread and mix to combine.

In a separate bowl, mix the flour, baking soda, and salt. Add the mixture to the wet ingredients and stir until combined. Mix in the chocolate chips.

Drop tablespoons of the dough on a cookie sheet and bake the cookies for six to eight minutes at 350°F.

Cool the cookies and then keep them in an airtight container.

Chewy Biscoff Chocolate Chip Cookies

These came out just as I hoped they would. I could taste the cookie spread and the cookies had a really nice chewy texture.

They are on the sweeter side because the cookie spread is so sweet. If you want them less sweet, I recommend reducing the amount of both sugars by a tablespoon or so.

This recipe is definitely worth giving up some Biscoff cookie spread. I will definitely make them again!

These chewy cookies are made with Biscoff cookie spread and studded with chocolate chips.

Ingredients

  • ½ cup unsalted butter at room temperature
  • ½ cup granulated sugar
  • ½ cup packed light brown sugar
  • ½ cup Biscoff spread
  • 1 egg
  • 1 tsp vanilla
  • 1 ½ cups flour
  • 1 tsp baking soda
  • ¼ tsp salt
  • 1 cup chocolate chips

Instructions

  • Preheat oven to 350°F.
  • Cream butter with both sugars until light and fluffy. Mix in the egg, vanilla, and Biscoff.
  • In a separate bowl, mix the flour, baking soda, and salt. Then add into the wet mixture until just combined. Fold in the chocolate chips.
  • Drop the dough by large tablespoons onto baking sheet and bake for 6-8 minutes.

  1. Biscoff you can get at your Walmart store! I did not know what this was and I was looking for cookie spread where the peanut butter was and came across do it!

  4. I found your recipe at random looking for an alternative to Biscoff donuts, (National Donut Day) since I lacked the ingredients. I had been wanting to try Biscoff spread for ages and Safeway just started carrying it. I will keep checking to see if they add the crunchy version, since I’m anxious to try it as well!   6. I found Biscoff at my regular grocery store today, and after hearing people rave about it I just had to buy a jar. I’ve already eaten several spoonfuls and having a hard time stopping! Can’t wait to make crepes and have this on them with some fresh berries, and I think I’ll try this cookie recipe too – if I can stop eating it!!

  8. yum! i’m baking these as we speak-thanks for sharing the recipe! i used to eat the biscoff cookies when i was younger, and until recently didn’t know they even had a spread! i FINALLY found some at world market and i’m not sure how long the jar is going to last! 🙂

  12. Oh, this is huge for me. I delighted in those little Biscoff cookies for the first time on an airplane last year. Now I have a secret stash just for me that I have every afternoon. But, Biscoff spread? I’ll have to scour the shelves now. The cookies looks so delicious.

    • It’s so good! Like I said, I don’t think most supermarkets sell it yet. World Market is one I’m aware of. Trader Joe’s also carries one but it’s not by Biscoff. Biscoff ships around the US for $5 flat rate. Amazon has free shipping.
