I love banana cake, but when I develop a craving for it, it takes a while to make. I have to mash some bananas, bake for an hour, let it cool, etc. But not anymore.

Banana cake is possible in just a few minutes and you can make the perfect single serving in a mug.

Easy Banana Mug Cake

I was inspired to make this after someone suggested it. I’ve been having a lot of fun coming up with different mug cake recipes and I really liked this banana one. The cake came out light and fluffy with a flavor of bananas and cinnamon.

  • The cake has an egg, but it doesn’t make it too eggy. If you don’t want to use an egg you should try my eggless banana bread mug cake.
  • I lightened up the cake a little by replacing oil with plain Greek yogurt and nonfat milk.
  • Like all the other mug cakes I’ve made, this one was easy to make in just a few minutes.

Ingredients

  • All-purpose flour
  • Baking powder
  • Sugar
  • Cinnamon
  • Nonfat plain Greek yogurt
  • Egg
  • Nonfat milk
  • Mashed bananas

Note: You will need three tablespoons of mashed banana for this recipe, which is about ½ of a banana. I recommend mashing the banana first and then measure the amount you need.

Recipe Steps

Combine all of the ingredients in an oversized mug. Be sure to really scrape the bottom of the mug to ensure all of the flour gets mixed into the batter.

Cook the cake for about 1 1/2 minutes in the microwave. The cake may appear slightly gooey on the outside with the cake is done. You can check it’s cooked through by inserting a toothpick into the center of the cake.

The cake is best if you let it cool before eating. This allows the flavors to develop fully.

Topping Ideas

I kept this cake plain, but you can add a topping if you want to dress it up.

  • Drizzle caramel sauce or chocolate sauce over the top.
  • Add some whipped cream dusted with cinnamon.
  • Garnish it with sliced bananas.
  • Sprinkle chopped walnuts over the top.

Banana Mug Cake

I love banana bread, but when I develop a craving for it, it takes a while to satisfy. I have to mash some bananas, bake for an hour, let it cool, etc. But not anymore. Banana cake is possible in just a few minutes.

Ingredients

  • 5 1/2 tbsp all purpose flour
  • 1/4 tsp baking powder
  • 4 tbsp sugar
  • 1/4 tsp cinnamon
  • 2 tbsp greek strained nonfat plain yogurt
  • 1 egg
  • 4 tbsp nonfat milk
  • 3 tbsp mashed bananas, about 1/2 of a banana, keep in mind 1 tbsp mashed banana is more than 1 tbsp of a piece of banana before it's mashed

Instructions

  • Mix all ingredient into an oversized mug until batter is smooth (make sure to get the flour that sticks to the bottom). Cook for about 1 1/2 minute in microwave.
  • Check for doneness. If inside is done, cake is done even if outside appears slightly wet/gooey. Let cake cool before eating.
