These grilled shrimp tacos have a caramelized BBQ glaze and are topped with a sweet and spicy mango salsa. This is a great weekend dinner because you can use store-bought sauce and salsa to cut down on the prep time.
With the weather so nice I haven’t wanted to spend hours in the kitchen, so I’ve been coming up with quick and easy dinner ideas. These grilled shrimp tacos are a great summer dinner because they’re easy to make with some shortcuts and you can cook them outside on the grill. No heating up the house!
I love to cook from scratch, but sometimes it’s nice to take advantage of store-bought ingredients to make things easy. For these tacos, I used store-bought marinade, BBQ sauce and prepared mango salsa. So, since there are only a few steps for the prep and shrimp cook really fast, so you’re in and out of the kitchen in about 30 minutes.
The recipe is simple – I made a quick BBQ glaze, brushed it on the shrimp as the cooked and wrapped them up in tortillas with some of the mango salsa.
Marinade and Glaze
I marinated the shrimp for 30 minutes in Stubb’s Beef Marinade, but any sort of marinade that pairs well with them will work including BBQ sauce.
For the glaze, you can use your favorite BBQ sauce for this recipe. I used Stubb’s BBQ sauce and actually used a combination of two different kinds so the sauce had a little spicy kick.
To make the glaze, you just take your BBQ sauce and combine it with some brown sugar. Once the shrimp are on the grill the sugar in the glaze with caramelize and create a sticky BBQ glaze.
Depending on the size of the shrimp they will take about four to eight minutes to cook, so be sure to keep an eye on them.
Assemble the Tacos
Once they are cooked, serve the grilled shrimop with tortillas and spoon the mango salsa over the top. We like to have some chips and salsa on the side or some Mexican corn salad, which is great with chips, too.

BBQ Shrimp Tacos
Ingredients
- 12 large raw shrimp deveined and unshelled
- 2 tbsp Stubb's Original BBQ Sauce
- 2 tbsp Stubb's Spicy BBQ Sauce
- 2 tbsp light brown sugar
- 1 1/2 cups Stubb's Beef Marinade
- 6 small corn tortilla rounds
- store-bought mango salsa for serving
Instructions
- Marinate shrimp in marinade for about 30 minutes. In a small bowl, mix BBQ sauces and brown sugar.
- Brush shrimp with BBQ sauce mix and then place on grill, until shrimp cooks and sugar caramelizes onto shrimp. Add shrimp on top of corn tortilla and spoon salsa over the top.
