Burrito Bowls with Cauliflower Rice Meal Prep

Easy and flavorful burrito bowls are served with cilantro lime cauliflower rice for a healthy meal that is perfect for your weekly meal prep.

I really love turning filling ingredients into a bowl. So far I’ve shared California Sushi Bowls with Cauliflower Rice, Egg Roll Bowls with Cauliflower Rice, and now these Burrito Bowls with Cauliflower Rice.

The burrito bowl contains healthy versions of many ingredients you’d find in a typical burrito, including corn, black beans, salsa and avocado. The star of the filling ingredients is the chicken. The juicy pieces of chicken are first marinated in fajita seasoning, which adds so much flavor to the chicken and the bowl.

Instead of serving the burrito bowl with rice, I substituted with cauliflower rice. And not just any cauliflower rice, but my cilantro lime cauliflower rice. It really ups the flavor of this bowl.

There’s basically three parts to this recipe: the fajita seasoning for the chicken, the taco bowl fillings, and the cilantro-lime cauliflower rice.

Recipe Tips

  • I like to make the seasoning first. Rub it all over the chicken and leave the chicken to rest while you make the cauliflower rice. The chicken will absorb the seasonings while it sits and will be so flavorful.
  • For the rice, I double my cilantro-lime cauliflower rice recipe. If you don’t want to rice your own cauliflower you can use frozen cauliflower rice to make it easier.
  • For a variation, you can also try this recipe with my Mexican cauliflower rice instead of the cilantro lime cauliflower rice.
  • For the taco filling, I like diced tomatoes, black beans, corn, diced avocado, salsa, and chopped cilantro.
  • You prep these bowls ahead and keep them in the refrigerator for three to four days. You can also freeze the bowls for up to a month.
  • If you plan on freezing these meals, I would leave out the avocado until you plan on serving them as they do not hold up well when frozen.
  • I use Pakkon round meal prep containers*

Ingredients

Fajita Seasoning

  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Taco Filling

  • 1 ½ lb boneless skinless chicken breast halved lengthwise to reduce thickness
  • 1 cup diced tomatoes
  • 1 (15 oz) can black beans rinsed and drained
  • 1 (15.25 oz) can whole kernel corn drained
  • 1 large avocado cubed
  • salsa store bought or your favorite homemade recipe
  • cilantro for garnish

Cauliflower Rice

Instructions

  • Add fajita seasoning ingredients into a small bowl and whisk until evenly blended.
  • Rub seasoning on both sides of chicken breast pieces. Allow chicken to marinate for 15 minutes.
  • While chicken is marinating, cook your cauliflower rice. 
  • Cook chicken on grill or in skillet on the stove, until fully cooked. Cut chicken into bite sized cubes.
  • To assemble your meal prep, add 1 cup of cilantro lime cauliflower rice to each container. Add 4 oz of chicken to each bowl. Divide tomatoes evenly across bowls. Repeat with black beans, corn, avocado. Add a generous scoop of salsa to each bowl. Garnish with cilantro. After all ingredients have cooled, seal meal prep containers and store in fridge or freezer.

Notes

  • While these meals can be refrigerated or frozen, I think they reheat better from the refrigerator as freezing them will change some of the ingredient textures.
  • If you plan on freezing these meals, I would leave out the avocado until you plan on serving them as they do not hold up well when frozen.
