I mentioned last week that I wanted to start baking up some bar cookie recipes because they are often under appreciated. I thought I’d start off big with the ultimate cookie bar.

It combines brownies, oreos and chocolate chip cookies, so you don’t need to choose just one.

It doesn’t get much sweeter than this. Well, I guess there are a couple more favorite things you could add to this, and I thought about it, but I didn’t want to go overboard…and this is pretty awesome as is.

The recipe comes courtesy of Kevin and Amanda, who made theirs into a gigantic tower of goodness topped with ice cream and chocolate. I don’t even want to know the calorie count.

Mine was a little less insane so I felt a little less guilty eating it. You can view the full recipe here.

Totally agree on the bar cookie front, they are so much quicker and easier than cookies, and just as scrummy! Yours are a beautiful example, im sure they are worth every calorie! :)

I used to not enjoy cookie bars since they don’t “look” like a cookie. But I’ve really started to love them the last few years, esp since they are so much quicker to make.

Well how can these not be to die for? And I love the absolutely decadent tower from Kevin and Amanda’s blog! But I agree with you, I would feel a little less guilty eating these your way ;)

    Looks gorgeous!

Do you think if you don’t have time, you can just use pre-made cookie dough for the bottom layer ?

Did you add the extra fudge to the brownie mix?

I can’t wait to try this recipe! THanks!

Hmm, I don’t see why not. I think the premade cookie dough should work. No I didn’t add extra fudge to the brownie mix. The fudge was supposed to be drizzled on the ice cream and since I didn’t do the ice cream version, I didn’t make the fudge either.

My heart just stopped. In a good way.

I think my cholesterol level went up when I saw your cookies. Then when I looked at Kevin and Amanda’s pictures, it went through the roof!

I wonder how these would taste with Thin Mint cookies in place of the Oreos?

Oooh, I’m sure it would be equally as delicious!

i love making cookie bars – they’re so much easier. just dump the stuff in the pan, bake and slice! haha.

have you ever tried making 7 layer bars? (coconut, condensed milk, graham crackers, choc chips, etc)? those are always a hit.

    • Kirbie replied: — June 23rd, 2011 @ 2:49 pm

No I’ve never tried a seven layer bar. Sounds delicious..
