I’m officially in serious pumpkin baking mode. I’m just trying to find enough time to try recipes I’ve bookmarked, remake old favorites and create some new ones of my own.

One thing I’ve been wanting to try is a chewy pumpkin cookie recipe. I love soft pumpkin cookies, but sometimes I prefer a chewier cookie so when I saw a recipe on Leelalicious I really wanted to try it.

These are pumpkin spice cookies and I decorated them with fall-colored M&Ms. I really like the flavor and texture of these cookies. Plus, they’re pretty easy to make, too.

  • Melted unsalted butter
  • Brown sugar
  • Vanilla extract
  • Pumpkin puree
  • All-purpose flour
  • Salt
  • Baking soda
  • Baking powder
  • Pumpkin pie spice
  • M&Ms

Chewy Pumpkin Spice Cookies

These pumpkin cookies are flavored with fall spices and studded with fall-colored M&Ms.

Ingredients

  • 1/2 cup unsalted butter, melted
  • 1/2 cup light brown sugar , packed
  • 1 tsp vanilla extract
  • 1/3 cup pumpkin puree
  • 1 cup all-purpose flour
  • 1/4 tsp table salt
  • 1/4 tsp baking soda
  • 1/4 tsp baking powder
  • 1 tsp pumpkin pie spice
  • 1 cup M&Ms, for the tops of the cookies

Instructions
 

  • Preheat the oven to 350°F. Line a baking sheet with parchment paper.
  • Mix together the butter, brown sugar, vanilla, and pumpkin puree in a bowl. In a separate bowl, whisk the flour, salt, baking soda, baking powder, and pumpkin spice.
  • Add the wet ingredients to dry ingredients and stir until just combined. Refrigerate the dough for 30 minutes.
  • Form 16 dough balls and place onto baking sheet, spacing them about 2 inches apart. Press down on each dough ball to flatten into a round disk. Press a few M&Ms into the top of each cookie. I used about five candies per cookie. Bake the cookies for about 12 minutes.
  • Cool the cookies on baking sheet before removing.
