Creamy Avocado Pasta

This avocado pasta is super creamy and ready in just minutes. The no-cook sauce is prepared in the blender, for a quick and easy, creamy pasta sauce full of avocado flavor.

I shared an avocado pasta recipe on the blog last year and while I still enjoy it, I think this version is even better.

The previous one was a little chunky, but this sauce is creamier, lighter, and even more flavorful with the addition of parmesan cheese. Plus, using a blender really helped to smooth and thin out the sauce enough to easily toss with your pasta.

I often get asked how I come up with my recipes. It’s not always the same process. It can be inspired by something I saw on TV or read on the internet, something I dreamed about in my sleep, a picture in my head, or a thought that comes to me while I’m resting in shavasana after yoga class (though these thoughts are usually of ice cream, donuts, donuts on top of ice cream, donuts blended in ice cream…you get the picture).

In this case, the phrase avocado blender sauce has been repeating in my head for the last week. And so after impatiently waiting for my avocados to ripen, I made this sauce. It’s just a few ingredients, but the end result is a silky sauce that feels light and refreshing. It comes together in minutes and will likely be ready before your pasta is even finished cooking.

Creamy Avocado Pasta

  • 8 oz uncooked spaghetti
  • 1 1/2 small avocados, peeled and pits removed
  • 1/2 cup milk
  • 1/2 tsp garlic powder
  • 2 1/2 tbsp fresh squeezed lemon juice
  • 1 1/2 tbsp olive oil
  • salt and pepper to taste
  • 2 tbsp shredded parmesan cheese (plus additional for topping)
  • 1 tbsp finely chopped parsley or basil (for garnish)

1. Boil spaghetti until cooked. Drain from water and set aside.

2. In a blender, add avocados, milk, garlic powder, lemon juice, olive oil, 2 tbsp parmesan cheese. Blend until smooth. If you find your sauce too thick, you can thin it out with some additional milk or olive oil. Add salt and pepper as needed.

3. Pour sauce over pasta and toss. Dish out onto plates. Sprinkle additional parmesan cheese on top and fresh herbs for garnish if desired.
