I purchased these beautiful tomatoes on the vine this weekend. As summer is winding down, I’m trying to buy and eat as much fresh produce as possible. For some reason though, when I saw these tomatoes, I immediately wanted to stuff and bake them. So I added some premade tomato sauce, mozzarella cheese, and baked them until cooked.

I cannot believe it is the last week of August. Summer is my favorite month and every year I try to savor it as much as possible, but it just seems to slip away so fast. I know we technically have a few more weeks, but with students going back to school, Labor Day, etc, it just doesn’t really feel like summer after August.

While they are a little messy from the tomato juices, these were delicious to eat and such a simple dish to prepare.
