Matcha Green Tea and Chocolate Zebra Cake

This zebra cake is made with matcha and chocolate for a fun presentation. The two cake batters are layered to create zebra stripes when you cut into the cake. The combination of flavors in this matcha chocolate zebra cake are unique and delicious, too.

I’ve seen quite a few posts on zebra cakes lately.  The most recent post I saw was the zebra cake made by the Food Librarian.  I love the idea of the zebra cake and how pretty it is.  And it’s quite easy to create the pattern.

However, rather than make the traditional chocolate and vanilla version, I decided to try a matcha chocolate zebra cake.  I guess it’s no longer a zebra, but I didn’t really know what else to call it.

I really enjoy the combination of matcha green tea and chocolate.  The “zebra lines” are less defined, though, since both the green tea and chocolate are such dark colors, but it’s still a fun cake to make and eat.

Ingredients

  • All-purpose flour
  • Baking powder
  • Salt
  • Large eggs
  • Granulated sugar
  • Milk
  • Vegetable oil
  • Vanilla extract
  • Unsweetened cocoa powder
  • Matcha powder

How to Make It

Stir the flour, salt, and baking powder in a mixing bowl. In a separate bowl, mix the eggs and sugar at high speed with an electric mixer. Mix in the oil and milk.

Add the dry ingredients to the wet ingredients and mix to combine. Stir in the vanilla.

Transfer half of the cake batter to another bowl. Add the cocoa powder to one batch of batter and mix to combine. Add the matcha powder to the other batch and mix until combined.

To make the zebra stripes, you will need two ¼ cup measuring cups. Scoop a ¼ cup of the matcha batter and pour it into the center of the pan. Top it with a ¼ cup of the chocolate cake batter. Repeat the process, layering each batter on top of each other until you’ve used up both cake batters.

Bake the cake at 350°F for about 50 minutes. The cake is done when a toothpick comes out clean.

The cake came out moist and light.  I think I might use this recipe base to recreate my matcha green tea and chocolate swirl cake. The recipe that the Food Librarian used, and which I used as well can be found on Home Cooking Rocks.

This zebra cake has a matcha twist. The stripes are created when you layer the two batters in a cake pan.

Ingredients

  • 2 cups of all-purpose flour
  • 1 tbsp of baking powder
  • 1/2 tsp of salt
  • 4 large eggs
  • 1 cup granulated sugar
  • 1 cup milk
  • 1 cup of vegetable oil
  • 1 tsp of vanilla extract
  • 2 tbsp unsweetened cocoa powder
  • 1 1/2 tbsp matcha green tea powder

Instructions

  • Preheat the oven to 350°F. Grease the bottom of a 10-inch round pan with oil.
  • Stir the flour, salt and baking powder in a bowl. In a large mixing bowl, mix the eggs and sugar until smooth and light colored, about two minutes on high speed of a hand mixer. Add the oil and milk, and mix for another minute.
  • Add the flour mixture and mix just until blended. The batter will be of pouring consistency but not thin. Stir in the vanilla.
  • Pour half of the batter into another bowl. Add the cocoa powder to one portion and mix until blended. Add the green tea powder into the other bowl of batter and mix until blended.
  • Assemble the cake: Take two 1/4 measuring cups. Pour a cupful of the white cake batter onto the center of the pan. Then, pour a cupful of the chocolate batter directly on top at the center of the cupful of white cake batter. Repeat until all the cake batter has been poured into the pan.
  • Bake the cake until a knife inserted at the center comes out clean. Approximately 50 minutes.

  1. I’ve never tried making any baked goods with anko batter, but I bet it would taste good. I’ll have to experiment with it sometime.

  2. I have bought my green tea powder at Ranch 99 and also at Nijiya market. I was surprised how easy it was to create the pattern too. It really is that easy, just pouring batter on top of each other! I hope you like it! I’m planning on adding this to my Thanksgiving menu.
