5 Minute Peanut Butter Cookie

This microwave peanut butter cookie recipe is so quick and easy! If you have a craving for peanut butter cookies this is a great recipe to make when you don’t want a whole batch. It definitely cures a sweet tooth and you only need five minutes to make it.

Continuing on with my 5 minute cookies, this time I tackled peanut butter. This microwave cookie recipe makes either one large cookie or two smaller ones.

I love how quick and easy these cookies are. I think the best part is that it only makes one individual serving so you don’t have the temptation of a whole entire batch of cookies.

I like making microwave cookies because you don’t have to turn on the oven or wait for the cookie to bake. It’s ready in no time! If you don’t have a microwave, I have an oven-baked peanut butter cookie recipe you can try instead.

Ingredients

  • Unsalted butter
  • Brown sugar
  • Vanilla extract
  • Large egg yolk
  • Creamy peanut butter
  • All-purpose flour
  • Chocolate chips

You can also add a pinch or two of a spice like cinnamon or nutmeg when you make the dough.

The chocolate chips are optional but they go great with the peanut butter flavor.

Instead of creamy peanut butter, you can use the crunchy kind. I haven’t tested this recipe with all-natural peanut butter.

I also haven’t tried this recipe with an alternative sweetener.

How to Make a Peanut Butter Cookie in the Microwave

Place the butter in a microwave-safe bowl or mug. Heat it for 20 seconds in the microwave to melt it.

Add the sugar, egg yolk, peanut butter, and flour. Stir the mixture with a fork until the dough forms. Mix in the chocolate chips.

Form the dough into a cookie shape. Place it on a plate lined with parchment paper. Microwave the cookies for 50 to 55 minutes. When it’s done it will still be delicate so let it cool before eating it.

You can also divide the dough into two equal parts to make two cookies. You should cook them one at a time for 35 to 40 minutes.

Recipe Tips

You don’t want to overcook the cookie so cook it for the lowest cooking time first. If it’s not done you can cook it a little more.

It’s best after it cooled. You can eat it warm, but it won’t hold together very well.

If you make two cookies, cook them separately for less time.

  • 1/4 tsp vanilla extract
  • 1 large egg yolk
  • 1 tbsp peanut butter
  • 1/4 cup flour
  • 1 1/2 tbsp chocolate chips

Instructions

  • Melt butter for 20 seconds in a small bowl or mug. Add in sugar, egg yolk, peanut butter, nd flour. Mix with a fork until dough comes together. Add in the chocolate chips and mix into the dough.
  • Shape the dough into shape of a cookie. Place on plate lined with parchment paper. Microwave for 50 -55 seconds. Cookie should looked cooked but may still be delicate/falls apart easily. Let cookie cool and firm up before eating. This makes one large cookie or you can split dough in half and make two smaller cookies. Microwave each separately, for about 35-40 seconds.

  1. Not very good:/ very raw even when cooked for 1:30 seconds. But, I liked the concept. I reckoned for people that like cookie dough.The texture was great just think it would of worked great if in oven.

  5. Um, I tried this, but I don’t know if I added too much of one ingredient or too little of another or maybe because my microwave was on full power, my cookies turned a bit… rubbery… =_____=
