This peanut butter cookie for one is a quick and easy recipe that is perfect when you have a sugar craving but don’t want to make an entire batch of cookies. It takes just minutes to make the dough before you bake it in the oven.
I’ve been working on creating a better version of my single serving peanut butter cookie. I previously made an eggless version. It was thick and rich, but I wanted something that is crispier and chewier.
Single Cookie Recipe

- It is chock full of peanut butter flavor.
- I also studded the surface with peanut butter chips giving it an extra peanut butter boost, but you could also use chocolate chips if you prefer.

Ingredients
- Melted unsalted butter
- All-purpose flour
- Baking soda
- Whisked egg
- Granulated sugar
- Creamy peanut butter
- Peanut butter chips
Recipe Steps
Combine all of the ingredients except the peanut butter chips in a small bowl and mix until smooth.
Shape the dough into a smooth round disc and place it on a prepared baking sheet. Press the peanut butter chips on to the top of the dough.
Bake the cookie for 10 to 12 minutes or until the cookie is set. Cool it on the sheet for a few minutes before eating.

Ingredients
- 1 tbsp unsalted butter melted
- 4 tbsp all purpose flour
- 1/8 tsp baking soda
- 1 tbsp whisked egg
- 2 tbsp white granulated sugar
- 1 tbsp creamy peanut butter
- 1 tbsp peanut butter chips
Instructions
- Preheat oven to 350°F. Add all ingredients except peanut butter chips into a small bowl and mix until batter is smooth.
- Scoop up dough and shape into a smooth round disc and place on a baking pan lined with parchment paper or silpat mat. Add chips on the surface of the cookie.
- Bake for about 10-12 minutes until cookie is set. Let cookie cool on sheet for a few minutes before eating.
