Almond flour: Make sure to use superfine almond flour which has a much finer texture, more similar to flour.
How to Make Cottage Cheese Crackers
- The cottage cheese is first blended until smooth. It is then mixed with the almond flour until a dough forms.
- The dough is rolled out thinly between parchment paper and plastic wrap.
- The dough is then baked for a few minutes to allow it to dry. The dough is briefly removed from the oven and cut into rectangles or squares. Place the dough back into the oven and bake until crispy and lightly browned.
- Allow the crackers to cool completely before breaking into individual crackers. You can also sprinkle salt or seasonings on the crackers before serving.
Texture
These crackers have a crispy texture. They do taste a little plain on their own but can easily be customized with salt or other seasonings. You can also add the seasonings or salt into the dough before baking.
Expert Tips
- Make sure to blend the cottage cheese until it is completely smooth. I recommend using a small personal blender if you have one because it is easier to blend when working with a small amount of cottage cheese.
- The dough is quite sticky which is why I recommend rolling it between parchment paper and plastic wrap with the plastic wrap on top so that it can peel off easily without any of the dough sticking to it.
- I recommend prebaking the dough for a few minutes before cutting it. The dough is easier to cut after it’s been partially baked and it also helps to achieve smoother straight cuts because the dough has already had a chance to expand in the oven before cutting it.

Ingredients
- 1/2 cup (110 g) cottage cheese I used 1%, can also use 2% or 4%
- 1 1/4 cups (126 g) superfine almond flour
Instructions
- Preheat your oven to 325°F (162°C).
- Add the cottage cheese to a small food processor or blender. Blend until completely smooth, scraping down the sides of the machine as needed.
- Transfer the blended cottage cheese to a mixing bowl with the almond flour. Mix until evenly combined; when you squeeze the mixture between your hands, it should hold together like dough.
- Place the dough on a large sheet of parchment paper. Place a large sheet of plastic wrap on top. Roll out the dough (with the parchment underneath and plastic wrap on top) until it is 1/8 inch thick. Peel off the plastic wrap. Transfer the rolled-out dough (still on the parchment paper) onto a large baking sheet.
- Bake the dough for 10 minutes then remove from the oven, and slice into approximate 1 x 2 inch rectangles using a pizza cutter or sharp knife. You can also cut them bigger or smaller, depending on your personal preference.
- Return the baking sheet to the oven and bake for an additional 20 to 30 minutes, or until the crackers are lightly browned and firm to the touch. Baking time will vary depending on how thin your crackers are so I do recommend watching them carefully and checking on them often during the last half of baking.
- Allow crackers to cool completely before separating and serving. You can also sprinkle salt or seasonings on top before serving.

Do you think these 2 ingredient crackers would work with gluten free oat flour instead due to anaphylactic allergy to ALL nuts & most seeds?
We have not tested this recipe with oat flour. You can probably make an oat flour version but my guess is that the amounts would not be the same.
