These crispy seed crackers are high protein, high fiber, low carb, low sugar and keto-friendly. The crackers need only 4 ingredients and are easy to prepare. They are also easy to customize.

These crackers come out so crispy and crunchy. I love how easy they are to make and you can customize them with different seeds of your choice.

Ingredients

  • Egg whites
  • Flaxseed meal
  • Sesame seeds (or a variation of other seeds)
  • Garlic powder

Egg whites: Egg whites form the base for these crackers and are the key to the crispy, airy light texture for these crackers. The egg whites also add protein to the crackers. You can use egg whites from fresh eggs or use carton liquid egg whites.

Flaxmeal: Flaxseed meal acts as a binder for the crackers. I like using golden flaxmeal because it adds a nice color to the crackers.

Sesame seeds: Sesame seeds add texture and flavor for the crackers. I like doing both black and white sesame seeds to add more color but you can do only white sesame seeds. You can also substitute some of the sesame seeds for other seeds like poppy or chia seeds, but I do recommend using mostly white sesame seeds in the crackers and only using 1 or 2 tbsp of other seeds.

Garlic powder: Garlic powder adds flavor to the crackers. You can also add salt. I wanted to keep the salt optional for people who are looking for a lower sodium option and these crackers can be made without any salt.

How to Make Seed Crackers

  • Add the egg whites to a large mixing bowl and beat with a mixer until medium peaks form.
  • Fold in the flaxseed meal, sesame seeds, any other seeds you are using and garlic powder. Be careful not to deflate the egg white mixture too much.
  • Scoop about 1 tbsp of mixture for each cracker onto your prepared baking sheet.The steps to shape dough for seed crackers
  • Tap your baking pan against the counter a few times to flatten the rounds, then use the back of a metal spoon to help shape and evenly flatten the rounds.
  • Bake the crackers for about 25 minutes or until golden brown and crispy.
  • Allow the crackers to cool completely before removing them from the baking sheet. Once cooled, the crackers are ready to eat. You can eat them plain, sprinkle some salt, or eat them with a dip.

Expert Tips

  • If you want to add salt, I recommend adding 1/2 teaspoon to the batter. The crackers do still have a good flavor without the salt if you want a low sodium cracker.
  • You can use regular flaxseed meal, but I like the color the golden flaxseed meal adds to the crackers.
  • Because the crackers contain a lot of seeds that are high in fiber, we do not recommend eating too many a day.
  • Sesame seeds are a great base seed. If you want more variation, you can reduce the white sesame seeds by 1-2 tbsp and replace with chia or poppy seeds. You do want to use small, light seeds. Larger seeds like sunflower seeds or pumpkin seeds are too heavy for these crackers.
  • You can make this as one giant sheet instead of individual rounds. After the cracker sheet is baked and cooled, you can then break into individual pieces.

4 Ingredient Keto Seed Crackers

These crispy crackers are low carb, low sugar, high protein, high fiber and keto-friendly. They only need 4 ingredients to make them.

Ingredients

  • 1/2 cup (4 fl oz/118ml) egg whites, either carton liquid egg whites or egg whites from about 4-6 eggs
  • 1/4 cup (26g) flaxseed meal
  • 6 tbsp (55g) sesame seeds, can substitute 1-2 tbsp with other seeds, see note
  • 1 tsp garlic powder

Instructions
 

  • Preheat the oven to 350°F (175°C). Line two large baking sheets with parchment paper.
  • Pour the egg whites into a clean mixing bowl. Using a hand mixer or stand mixer fitted with the whisk attachment, beat on medium-high speed until medium peaks form.
  • Sprinkle in the flax meal, sesame seeds, garlic powder and any other seeds you are adding. If you want to add salt, add about 1/2 tsp salt as well at this time. Using a spatula, gently fold everything together just until evenly combined, being careful not to knock all the air out of the whipped egg whites.
  • Drop about 1 tbsp of the mixture onto the prepared baking sheet for each mound, leaving about 2 inches between each mound. Firmly tap the baking sheet on the counter a few times to naturally flatten and spread the mounds into thin rounds. For any rounds that have not spread, use the back of a metal spoon to flatten them.
  • Bake for 20 to 25 minutes, or until the crackers are crispy and golden brown.
  • Let the crackers cool completely on the baking sheet before serving or storing. They'll continue to crisp as they cool. The crackers can be enjoyed right away. Uneaten crackers should be stored in an airtight container in the fridge or freezer. These crackers are high in fiber so we don't recommend consuming more than a few a day.

Notes

  • Seed note: This recipe does need 1/4 cup flaxseed meal. This is not optional. For the sesame seeds, you can replace 1-2 tbsp of the sesame seeds with another small seed like chia or poppy seeds.
