Breakfast Republic Encinitas

Breakfast Republic, the very popular San Diego brunch eatery, recently opened a third location in Encinitas.

We’ve been so excited by the expansions. We have been frequent visitors of the original location and also visited the second location that opened a few months ago in Liberty Station. Last weekend, we were invited in to check out the new Encinitas location.

With each new location, they add new additions and I really love the new lounge area with egg-shaped chairs and tables.

And this is the first time I’ve noticed this, but the lights fixtures are whisks.

Oreo Latte

I hadn’t had my morning coffee yet, so I started off with one of their delicious lattes.

Coconut Latte

Mr. K chose to get an extra large coconut latte. I really love how fun the mugs are here. I sometimes think I order coffee drinks here just for the mugs.

Oreo pancakes

Another new addition to Breakfast Republic are these plates. I really love design.

I always enjoy the pancakes and french toast here. I usually do a sampler, but this time I decided to stick with one flavor. Not only is there oreo cookies crushed into the batter, but the pancakes are stacked with frosting to mimic the appearance of Oreo cookies. Genius.

Also, where have Oreo pancakes been all my life? These were chocolatey, fluffy and full of Oreo cookie flavor. I need to make a version of these at home soon.

Jurassic Pork Benedict with Avocado

Mr. K opted to try their eggs benedict, served with their thick-sliced bacon. He added avocado and also upgraded his potatoes to Brussels sprouts roasted potatoes with parmesan cheese, bacon and onion.

Overall, we had another solid brunch here. The staff is always friendly and we love the large menu selection. Breakfast Republic remains one of our favorite brunch spots in San Diego and we are so happy for their continued expansion (they have locations in Carmel Valley and East Village coming soon!).
