Zucchini noodles are a great way to lighten up traditional pasta and noodle dishes and I love to come up with new zucchini noodles recipes. I’ve gathered some of my favorite recipes that you can serve as main dishes, side dishes, or prep ahead for weekly meal prep.
Main Dishes
Obviously, zucchini doesn’t taste like pasta or noodles, but when you spiralize it to make “zoodles” it can take the place of them in many dishes. Zucchini has a very mild flavor and pairs with countless sauces, seasonings, and spices. I’ve come up with a lot of different main dishes that you can use zucchini noodles in and skip the carbs in pasta and noodles.
Thai Peanut Zucchini Noodles | Zucchini noodles are tossed in a creamy, savory, and slightly spicy Thai peanut sauce for an easy and light meal. It’s ready in less than 30 minutes!
Zucchini Egg Nests | These are also a low-carb alternative to traditional egg nests which are usually made with potatoes. They are great for breakfast, brunch, or even a light dinner.
One-Pot Pizza Zucchini Noodles | If you’re craving pizza but want to lighten up the carbs, this one-pot dinner is great. It has all of the flavors of pizza but lighter and healthier.
Garlic Butter Chicken with Zucchini Noodles | Tender pieces of chicken are coated in a savory soy garlic butter sauce and served with zucchini noodles for a flavorful, easy low carb meal.
One-Pot Fajita Pasta with Zucchini Noodles | A lighter and low carb version of fajita pasta using zucchini noodles. Everything cooks in one pan for easy clean-up.
Drunken Zucchini Noodles | This is a lighter, low carb version of the popular Thai dish using zoodles instead of rice noodles. It’s quick, easy, and delicious.

I love to meal prep because it’s so nice to make meals over the weekend so they’re quick to warm up for easy dinners and lunches during the week.
