21 Creative Zucchini Recipes

There’s a whole lot more you can do with zucchini besides making quick bread or zucchini noodles and so I’ve round-up my favorite creative zucchini recipes for you to try. Pizza, muffins, tortillas, sandwiches, and tots are just a few of the ways to put all the summer zucchini to good use. Of course, I’m sharing my favorite classic zucchini bread recipe, too, along with 20 other recipes.

Main Dishes

When we are trying to eat lighter, zucchini is an ingredient I turn to make our meals. It’s a great substitute in many dishes and it’s so versatile you can use it to make so many creative main dish recipes like “crab” cakes, fritters, sandwiches, and even pizza. Here are some of my favorite recipes you might like to try!

Zucchini Grilled Cheese Sandwiches | These sandwiches are made with a zucchini “bread” for a lighter twist on the classic. I also have a pizza zucchini grilled cheese sandwich you might like, too.

Zucchini Fritters | These are easy, cheesy, and low carb. They are crispy on the outside and soft and cheesy on the inside.

Waffled Grilled Cheese | These sandwiches are made with zucchini waffles and melted cheese. All of it cooks in the waffle iron for easy clean-up.

Zucchini Egg Nests | This is my low-carb alternative to potato egg nests. They’re great for breakfast, brunch, or even as a light dinner.

Taco Boats | These stuffed zucchini boats are great for a low-carb taco night. The zucchini are filled with seasoned taco meat and topped with cheese.

Zucchini “Crab” Cakes | Zucchini “Crab” Cakes, also known as Poorman’s Crab Cakes, are made with zucchini instead of crab. Even though these fritters do not contain any crab meat, they taste like regular crab cakes!

Low-Carb Pizza Crust | You can use zucchini to make a delicious pizza crust that’s like cauliflower pizza crust but prettier because the cooked crust has flecks of green.

Soft Tortillas | Yes, you can use zucchini to make tortillas! Whether you’re trying to eat healthier, looking for something low carb or just hoping to use up a bunch of zucchini these soft tortillas are a great way to do it. Fill them with all of your favorite taco ingredients or use them to make wrap sandwiches.

Appetizers and Snacks

Like main dishes, zucchini can be used to make lots of snacks and appetizers like muffins, “tater” tots, and even breadsticks. I love these zucchini recipes so much I don’t even make the traditional ones anymore. I hope you love them, too.

Low-Carb Breadsticks | These zucchini breadsticks are so delicious you won’t miss the carbs. They’re cheesy and so delicious.

Zucchini Tots | Hot and crispy tots made with zucchini! They’re flavored with Parmesan cheese and a great as a side dish, appetizer or snack. I also have a keto zucchini tots if you want a low-carb version.

Parmesan Zucchini Crisps | You only need two ingredients for this addictive snack. Cooking them in the air fryer gives them a really crispy texture like they were deep-fried, but a lot lighter and healthier.

Crunchy Bang Bang Zucchini | Crunchy baked pieces of zucchini are drizzled with bang bang sauce for a delicious and easy snack or appetizer.

Crispy Baked Parmesan Zucchini | Sliced zucchini is breaded with panko and Parmesan cheese and baked until crispy. Serve them with a marinara dipping sauce for a delicious snack.

Desserts

Zucchini is an ingredient you can sneak into sweet desserts and treats because you can’t taste it. It’s great to use in baking because it gives quick breads and cakes a lot of moisture which means you can cut back on the oil. Chocolate Zucchini Bread | This chocolate zucchini bread is incredibly rich, chocolatey, and moist. You don’t taste the zucchini at all. It’s also easy to whip up and does not require a mixer.

Chocolate Mug Cake | A single serving chocolate zucchini mug cake that cooks in the microwave in less than 2 minutes. This cake is moist, fluffy, chocolatey, and satisfies zucchini bread cravings without having to make a big batch.
