Summer means it’s time for no-bake desserts and I’ve rounded up 22 of my favorite recipes for you to browse. There are no-bake cheesecakes and dessert bars plus plenty of other easy desserts for all of your summer BBQs, potlucks, and other celebrations.

No-Bake Cookies | These easy no-bake oatmeal cookies are a summer classic and my version is made with Nutella. No need to turn on the oven – the cookies set while they chill in the refrigerator. I also have a keto-friendly no-bake cookie you might like to try, too.

Cookies and Cream Bars | You do need to melt some marshmallows in the microwave for this recipe, but they are still a no-bake creation! You only need three ingredients and in just three easy steps you can have these sweet, chewy dessert bars ready to go.

No-Bake Strawberry Nutella Tiramisu Cake | Traditional tiramisu gets a Nutella and strawberry upgrade with this no-bake cake. Make it ahead for a delicious summer dessert.

3 Ingredient No Bake Oatmeal Bars | These easy bars take minutes to make on the stove or in the microwave. The end result is chewy peanut butter oat bars that keep well for several days.

Coconut Crack Bars (Paleo, Gluten-Free) | These no-bake dessert bars taste like candy bar filling. As an added bonus, they are also paleo and gluten-free and you only need four ingredients to make them.

Cookies and Cream Dough | Turning on the oven in the summer to bake cookies isn’t my favorite thing to do, but that doesn’t mean you can’t still enjoy some cookie dough! My cookies and cream dough is safe to eat because it doesn’t contain any eggs. Be sure to try my edible chocolate chip cookie dough, too!

Cacao Brownie Bites | For something a little healthier I like to make these brownie bites because they taste chocolatey and fudgy without all the guilt. Plus, they are easy to make. Or try my easy chocolate avocado truffles  – they only have three ingredients and are easy to make, too.

Cheesecake Recipes

When I think of no-bake desserts the first thing I think of is no-bake cheesecakes. They’re less fussy to make than a regular cheesecake and the flavor combinations are endless. I’m sharing four of my favorite easy cheesecake recipes that you’ll want to make all summer long.

No-Bake Oreo Cheesecake | This cheesecake is creamy and rich and studded with crushed Oreo pieces for a delicious cookies and cream flavor. It has an easy-to-make no-bake graham cracker crust and is a cool and creamy warm-weather treat.

No-Bake Avocado Cheesecake | Avocados give this cheesecake a rich and creamy texture that still tastes light. They also give the cake a beautiful color that’s perfect for summer. I also have a simple No-Bake Avocado Pie made with Greek yogurt that’s delicious, too!

No-Bake Peanut Butter Cheesecake | I love peanut butter cups so I incorporated them into this peanut butter cheesecake. The crust is made with crushed Oreos for an extra chocolate boost.

No-Bake Double Chocolate Oreo Cheesecake | This decadent dessert has two cheesecake layers: a rich chocolate cheesecake and a fun cookies and cream cheesecake layer. Decorate it with Oreos for an impressive summer dessert.

Pudding Recipes

Old-school homemade puddings are cooked on the stovetop before they are chilled, but you don’t need a pot or stove for the pudding recipes I’m sharing. Some substitutions and simple ingredients make these pudding recipes a great no-cook dessert option during the summer.

2-Ingredient Mango Coconut Pudding | This dairy-free pudding only has two ingredients. No gelatin needed! It’s light, creamy and easy to make.

Chocolate Avocado Pudding | I really love adding avocados to my desserts. It makes them healthier without sacrificing on taste and it’s rich and creamy making it a perfect substitute for many desserts, like this chocolate pudding.

Blueberry Coconut Chia Pudding | Chia puddings are so easy to make even my disaster-in-the-kitchen husband can make them! All you need for this blueberry chia pudding are three ingredients, five minutes of prep, and the end result is a creamy, healthy summer dessert.

5-Minute Nutella Pudding | Save this one for your Nutella cravings! You only need two ingredients and five minutes to make this cool and creamy pudding.

Mousse Recipes

Like pudding, mousse is a cool and creamy dessert but it’s lighter and airier than pudding. The recipes I’m sharing are all easy to make and not as complicated as traditional mousse recipes. They’re perfect for summer entertaining or as a quick dessert when a craving for something sweet hits.

2-Ingredient Chocolate Mousse | I’ve made this chocolate mousse a few dozen times and it’s one of my favorite easy summer desserts. The secret ingredient is tofu which gives the mousse its creamy texture, but no one will ever guess it’s in there because you can’t taste it.

3-Ingredient Mango Mousse | This mousse recipe was inspired by a dessert I had at an Indian restaurant. It’s easy to make and a refreshing treat. Top it with some Coconut Whipped Cream for a tropical twist.

2-Ingredient Nutella Mousse | By now you know how much I love Nutella and this simple mousse is made like the chocolate one I already shared (secret ingredient: tofu!). It’s perfect for those times you need a quick dessert but don’t have much time to make one.

Avocado Mousse with Coconut Whipped Cream | One more secret ingredient mousse, but this time it’s an avocado version made with just three ingredients.

Stuffed Strawberries Recipes

For entertaining, I love easy-to-make bite-sized desserts like stuffed strawberries. It’s a great way to take advantage of in-season strawberries and is an easy way to serve a crowd at potlucks, BBQs, or other summer celebrations.

Nutella Cream Stuffed Strawberries | More Nutella! But this time it’s whipped into a light and airy whipped cream and piped into fresh strawberries. I made these stuffed strawberries for a house-warming once and my guests ate two plates of them! For an even easier version check out my Nutella Stuffed Strawberries.

Stuffed Strawberry Cheesecake Bites | Strawberries and cheesecake are a classic combination and this easy summer treat is a one-bite way to get all the cheesecake flavor without all of the calories of a traditional cheesecake.

Mascarpone Stuffed Strawberries | Have you ever tried mascarpone cheese? It’s sold at most grocery stores and is similar to cream cheese except it’s richer and creamier. For this recipe, I whipped it with some cream and piped it into strawberries. Top the strawberries with blueberries and you get a festive dessert that’s perfect for Memorial Day or 4th of July.
