Cauliflower doesn’t have to be served as a side dish or rice substitute – it’s a great vegetable to use in all kinds of main dishes, too. I love to use it in place of meat for healthy versions of some of my favorite comfort foods like Chinese take-out dishes, tacos, and even pasta and pizza.
